Menu Plan Monday

I really, really liked the new recipes that we tried last week.  My favorite was the Buffalo Chicken.  I don't think Tyler liked it as much as I did but he still said it was good!   I LOVED using my crockpot so much....but this week I'm giving it a rest :)  This week none of my recipes are from pinterest for a change!  Just the good ole' recipe box in my kitchen.  

Monday
Chicken and Rice Casserole
my mom's recipe
1 lb. chicken breasts
4tb melted butter
1 c. rice (I do a little more)
1 can cream of mushroom
1 can cream of celery
1 can milk
mix all ingredients together and pour over chicken breasts in a 9x13 pan.  Sprinkle 1/2 pkg. Lipton onion soup on top.
Bake at 325 for 1 hour 45 minutes covered.
Check it often, may only need 1 hour 30 minutes cooking time depending on your oven.

Tuesday
Wild Rice and Ham Casserole
my mom-in-law's recipe
1 pkg (6oz) Uncle Ben's long grain wild rice
16 or 20 oz frozen chopped broccoli
1 c. shredded cheddar cheese
2 c cubed ham
1 can cream of celery soup
1 c mayo
2 t mustard
grated parmesan cheese

cook rice according to directions on package; spread over bottom of greased 9x13 pan.  Partially cook broccoli and drain.  Layer over rice.  Sprinkle ham and cheese.  Combine soup, mayo and mustard, spread over ham and cheese.  Sprinkle with parmesan cheese.  Bake at 350 40-45 minutes. Uncover last 5-10 min.

Wednesday
1-2-3 Veggie Chili

1 (28 oz) can tomatoes, undrained
1 (16oz) jar thick n' chunky salsa
1 (15oz) can black beans, rinsed, drained
1 (10oz) pkg frozen whole kernel corn
1 cup halved zucchini slices
1 t chili powder
1 (8oz) pkg cheddar cheese

mix tomatoes, salsa, beans, corn and chili powder in saucepan.  Bring to boil on med. heat.  Reduce heat to low; simmer 10 min.
Sprinkle 2 tsp. cheese on bottom of each bowl and top with chili.


Thursday
Marinated Baked Pork Chops
recipe from Megan Anothony
1 T soy sauce
2 T veg. oil
1 T worchestershire sauce
1 tsp lemon juice
2 T brown sugar
2 T ketchup

6 pork chops

Preheat oven to 350.  Mix all ingredients in small bowl.  Place pork chops on medium baking dish and spread with 1/2 sauce.  Cover and Bake 30 minutes.  Uncover, drain liquid, pour remaining sauce over chops.  Bake another 30 minutes.
